May is a bittersweet month for us...

our Dickinson guests who have stayed with us regularly for five, sometimes six years see their students graduate and move on to the next exciting stage in their lives. We join in the celebrations vicariously - fortunately Dickinson streams the ceremony live over the internet - and as we go about our day preparing rooms, taking calls, and doing all the other bits and pieces that make our days one of us will call out "There's one of ours! It's ...!". And work stops for a few moments while we feel the joy of their great achievements.

And then the following day we spend a short time feeling like empty-nesters until a call comes in "Do you have any rooms left for Freshman orientation?". The sun comes out and we start the cycle of fun all over again!

So thank you to all the parents who have stayed with us and who we hope to see again. And a special thank you to the parents whose second or even third student is attending Dickinson. We'll see you for a few more years yet!

Andalusia revisited...

Of all the restaurants in Carlisle, Andalusia and its sister restaurants Cafe Bruges, and Trattoria Piatto, are probably the ones most constantly changing their menus both for different seasons, and sometimes, we think because maybe one of the chefs tried something different - and it was awesome!

You may think that tapas are not quite what you want for dinner, but at Andalusia, what you think may not be quite what you get! You see, apart from the more traditional tapas and paellas, Andalusia has enlarged their menu to include meatballs, wings, and burgers.

Well, sort of...

If you've been put off by the thought of ordering "Albondigas con Manchego" then you can be reassured that the waiters do also understand the simple expression "Meatballs"! And what you get are no ordinary meatballs, rather they are "Spanish pork meatballs in a spiced tomato sauce topped with Manchego cheese and served with crusty bread". The Moroccan Chicken Wings are tossed in a Harissa hot sauce and served with a cilantro yogurt. Or put another way, "Eat your heart out, Buffalo!"

But wait! You are saying to yourselves, what about the burgers? Well they take the concept of burger to a whole new level, as our photograph shows. The Andalusia Burger is spiced with Pimentón, a Spanish smoked paprika which is so good that Mary took a photo of the Pimenton container, came home and promptly ordered it online. It hasn't appeared in any of our quiche recipes yet - but give it time! The burger is topped with fried Serrano ham, Manchego cheese, & piquillo pepper ketchup. Honestly, this could be the best $8 you've spent in a long time!

We like to match the wings and burgers up with Patatas Bravas. Fried Fingerling potatoes sitting on a bed of salsa brava - a red pepper sauce - and topped with an allioli, sort of a Spanish version of mayonnaise.

The menu really doesn't do the food justice. The sheer variety of great tastes in the salads, the Paellas, the Tapas and the deserts will make you want to return to Adalusia time after time. Of course you could buy a ticket to Seville instead but... why would you?
