Pennsylvania is a beautiful State, and there is no part of it which combines beauty, history, activities and culture more than Carlisle and the Cumberland Valley. If you are planning a getaway after the extremes of the summer, then September and October are probably the most attractive times to visit our area and to be able to spend comfortable quality time outside at the many attractions nearby.

From the abundance of cycling and walking routes to the hiking paths of King's Gap and the Appalachian Trail we have the perfect environment to help you ease slowly into the Fall months! September kicks off with Fish for Free Day on Monday September 3, which allows anyone to legally fish in PA with NO FISHING LICENCE REQUIRED!

With two of the world's top 50 trout streams within 5 miles, is there anything to compare with a Better Way to Fish combined with a "Better Way to Stay"?

Dickinson Freshmen move in!

For the past couple of weeks the Carlisle House and the town has greeted student athletes, RA's, the incoming freshmen, and finally the returning upperclassmen, so our parking lot has been filled with packed cars and trailers! It was wonderful to greet the new students and families here and we look forward to their visits over the next four years.

We continue to meet many prospective Dickinson students and their parents and look forward to those emails around the holidays with excited notices of Early Decision acceptances!

2012 Corvettes at Carlisle

This year's show was probably the biggest ever with over 5000 Vettes in Carlisle and a beautiful evening for the Corvette Parade Saturday.

Here is one special 1977 model proudly owned by our guest, Sondra which won the "Celebrity Pick First Prize for a Female Owner". You won't be surprised to learn that it belonged to a Playboy Bunny prior to Sondra!

Butterfly which ran for two years on Broadway. He also won the 1988 Tony Award, OBIE Awards in 1997 and 2008, and was a finalist for the Pulitzer Prize in 1989 and 2008.

Can you say "Poitou Pistou"

Introducing our newest Carlisle House quiche flavor : French Poitou Pistou. It has a creamy texture from flavorful Chevre cheese and is highlighted with tasty herbed sun-dried tomatoes and basil pesto.

Chevre (meaning goat in French) originated in Poitou, a province in the west-central area of France's Loire Valley whose capital was Poitiers. Pistou was the French derivation of the Genovese word pesto, the sauce of which was brought to France with in the 19th century by immigrants from Ligury and Genoa. Many guests commented that they thought that they did not like chevre, but it has received rave reviews and we look forward to having you sample it.

Incidentally, many of the Acadians who settled in Nova Scotia originated in Poitou, and when they were subsequently (and short-sightedly) deported by the British a large number migrated to Louisiana where they became known as Cajuns, so the connection with wonderful food and culinary techniques has certainly spread a long way from Poitiers!
